Abstract
This dissertation analyses, firstly, the meanings and values ascribed - both orally and in writing - to 'organic food' (in Denmark 1981-2004). The result is that several meanings are in play in the field. Secondly the dissertation attempts to grasp consumer interest i organic food in Denmark. Taking departure from social theoretical interpretations of the interest the dissertation develops its own interpretation in which 'distaste for the artificial' plays a key role.
