I am an associate professor at the Bachelor’s Programme in Nutrition and Health at University College Absalon and hold a PhD in food design and consumer behaviour.

My work focuses on promoting healthy and plant-based food choices through behavioural design, food literacy, and co-creation with various target groups – including children, families, and professionals.

I have extensive experience with both qualitative and quantitative research methods and have led and contributed to several practice-oriented projects on food culture, legumes, mushrooms, and sensory meal development.

I am also actively engaged in science communication – both to academic peers and the general public through events such as Madens Folkemøde and Roskilde Dyrskue.
