Tenna Christoffersen is an expert in facilitating co-creation, change processes, and learning within the fields of nutrition, food, and meals in practice. Her research and teaching focus on educating health professionals and contributing to the development of practice with the aim of addressing nutritional risks and nutritional conditions across diverse target groups. These include overweight and obesity, type 2 diabetes, nutritional therapy in rehabilitation, as well as nutrition-related care and support for older adults.

For more than sixteen years, Tenna has educated and trained health professionals at University College Absalon, and she has contributed to continuing professional education within the primary health sector. In practice-oriented projects, she has collaborated with several municipalities to prevent, identify, and manage undernutrition among older people. Most recently, in her PhD project IFEBO (Interventions focusing on nutrition and physical activity for overweight older nursing home residents), she conducted a 12-month cluster-randomized controlled trial in six public nursing homes.

In addition, Tenna is engaged in multiple partnership projects aimed at developing sustainable and future-oriented food and meal solutions, with a particular focus on nutrient composition, protein quality, and digestibility.

Tenna possesses extensive experience with project funding, planning, implementation, and evaluation.

She has also contributed to several textbooks and publishes widely, including peer-reviewed academic articles, professional journal contributions, and popular science publications.
